Preparing potting mix for carrot can be a little more demanding then other vegetables but it is all worth it! Make a good mixture of sand and clay, keep nitrogen low and potassium high, ensure there are no stones and soil is smooth. Sift and mix ably, remove stones from it. Otherwise your carrots are in for getting all forked and deformed, disappointing you carrot harvest. Carrots don’t like being transplanted. You can choose to sow your carrot seeds in the ground or in potting mix. Carrots can be grown just anywhere with a well-draining light soil that receives full sun. You need not fertilize carrots additionally, and if you are one of those doting plant parents, do feed your carrots with potassium and phosphorus rich nutrition once they reach a height of three inches. Carrot Orange Juice recipe- A darned pretty colorful, nutrient dense drink like this is sure to make your day! What you need. 2 Carrots 2 Oranges 1 Cup tender coconut water A slow juicer Directions: First juice carrots and then oranges In your freshly juiced drink add coconut water. stir it well. If you prefer chilled juice always chill the ingredients first and then juice. Chilling drinks after they are juiced will result in a loss of nutrients due to oxidization, and I bet the taste alters too! French Carrot salad: One of my favourite salads, yummy for the taste buds and light on the stomach! Ingredients you’lll need from your garden: 4 Carrots Make short slivers for carrots to readily absorb dressing  2 Bunches of green onions coarsely chop them 2 strands of parsley Finely chop them 1 cup boiled chick peas. For Dressing 2 tablespoons virgin olive oil, extra virgin even better!! 2 tablespoons lemon juice 2 tablespoons of agave syrup 1 teaspoon roasted, coarsely crushed mustard ½ teaspoon ground cumin ½ teaspoon rock salt Instructions  1.To prepare the carrots make short strokes with a julienne peeler 2.Place the carrots in a medium serving bowl. Add boiled chickpeas, parsely and green onions to the bowl. 3.For dressing whisk all ingredient in a bowl until completely blended. 4.Pour the dressing over your vegegies and stir well, for best flavour marinade the salad for 20 minutes before eating.
